A delicious and easy-to-make Taco Rice Bowl that combines savory ground meat, beans, and fresh toppings for a satisfying meal.

Ingredients

Base Ingredients

  • 1 cup uncooked white rice
  • 2 cups water or chicken broth (use chicken broth for more flavor.)
  • 1 lb ground beef or turkey (turkey for a lighter option.)
  • 1 packet taco seasoning ((about 1 oz.))
  • 1 can black beans ((15 oz, drained and rinsed.))
  • 1 cup corn ((frozen or canned.))
  • 1 cup diced tomatoes ((fresh or canned.))
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa ((for topping.))
  • 2 tablespoons olive oil
  • salt and pepper (to taste)
  • fresh cilantro and lime wedges (optional for garnish.)

Instructions 

  • Cook the rice in water or chicken broth according to package instructions.
  • In a skillet, heat olive oil over medium heat and cook the ground meat until browned.
  • Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir and cook for 5-7 minutes.
  • Once the rice is cooked, fluff it and serve it in bowls topped with the meat mixture, lettuce, cheese, salsa, and optional garnishes.

Notes

For extra flavor, consider adding avocado or jalapeños as toppings.
