Instructions
Cook the rice in water or chicken broth according to package instructions.
In a skillet, heat olive oil over medium heat and cook the ground meat until browned.
Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir and cook for 5-7 minutes.
Once the rice is cooked, fluff it and serve it in bowls topped with the meat mixture, lettuce, cheese, salsa, and optional garnishes.
