Ingredients

Vegetables

  • 6 pieces bell peppers (halved and seeded)
  • 1 lb lean ground beef
  • 2 cups cooked brown rice
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans
  • 15 oz can corn
  • 1 packet taco seasoning
  • 1.5 cups shredded cheddar jack cheese

Instructions 

  • Preheat oven to 350°F (175°C). Cut peppers in half, remove seeds, and bake for 5 minutes.
  • Sauté diced onion with garlic powder, chili powder, salt, and pepper until fragrant. Add ground beef and cook until browned.
  • Stir in diced tomatoes, black beans, corn, rice, and taco seasoning; cook until combined.
  • Fill each pepper half with the beef mixture, cover with foil, and bake for 10 minutes.
  • Uncover, sprinkle cheese on top, and bake for an additional 15 minutes until bubbly.

Notes

For a vegetarian version, substitute the beef with beans or plant-based protein.
