Instructions
Preheat oven to 350°F (175°C). Cut peppers in half, remove seeds, and bake for 5 minutes.
Sauté diced onion with garlic powder, chili powder, salt, and pepper until fragrant. Add ground beef and cook until browned.
Stir in diced tomatoes, black beans, corn, rice, and taco seasoning; cook until combined.
Fill each pepper half with the beef mixture, cover with foil, and bake for 10 minutes.
Uncover, sprinkle cheese on top, and bake for an additional 15 minutes until bubbly.
Notes
For a vegetarian version, substitute the beef with beans or plant-based protein.
