A quick and flavorful salmon pasta dish that skips the cream but delivers rich taste and satisfying textures.

Ingredients

Pasta

  • 14 oz pasta (e.g., Barilla Penne) (sturdy texture)

Salmon

  • 1 lb salmon (cut into 1-inch chunks)

Olive oil

  • 3 tbsp olive oil

Salt

  • to taste salt

Black pepper

  • to taste black pepper

Onions

  • 1/2 cup onions (finely diced into 1/4-inch pieces)

Butter

  • 2 tbsp butter (prefer Kerrygold for richer flavor)

Garlic cloves

  • 4 cloves garlic

Dried parsley

  • 1.5 tsp dried parsley

Fresh lemon zest

  • 1/2 tsp lemon zest (fresh)

Milk

  • 1/2 cup milk (lukewarm to prevent sauce from breaking)

Parmesan

  • 1 cup parmesan (freshly grated for smoother melt)

Red pepper flakes

  • to taste red pepper flakes

Pasta water

  • 1 cup pasta water

Instructions 

  • Cook pasta until al dente, then drain and set aside.
  • Sauté onions and garlic in olive oil and butter until fragrant.
  • Add salmon chunks and cook until just opaque.
  • Mix in milk, Parmesan, lemon zest, parsley, red pepper flakes, and pasta water. Toss with cooked pasta.
  • Season with salt and black pepper to taste, then serve hot.

Notes

Use freshly grated Parmesan for best flavor and texture.
