Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts or thighs
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 0.5 teaspoon ground ginger
  • 1 teaspoon cornstarch

Grains

  • 1 cup white or brown rice or quinoa

Vegetables

  • 1 cup carrots
  • 1 cup broccoli
  • 0.5 cup snap peas
  • 0.5 cup peppers
  • 0.5 cup zucchini

Other

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sesame seeds
  • 2 green onions green onions

Instructions 

  • Brown the cubed chicken in a hot skillet until no pink remains.
  • Mix soy sauce, honey, rice vinegar, sesame oil, ginger, and cornstarch to make the sauce.
  • Add the sauce to the chicken and simmer until thickened.
  • Serve the chicken over cooked rice and steamed vegetables, then sprinkle with sesame seeds and chopped green onions.
  • Optional: add extra teriyaki sauce at the end for more flavor.

Use fresh vegetables for best flavor and texture.
