Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts or thighs
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 0.5 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 cups white or brown rice or quinoa
  • 2 carrots carrots (sliced)
  • 1 head broccoli (cut into florets)
  • 1 cup snap peas
  • 1 peppers peppers (sliced)
  • 1 zucchini zucchini (sliced)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons sesame seeds
  • 2 green onions green onions (chopped)

Instructions 

  • Brown the cubed chicken in a hot skillet until no pink remains.
  • Mix soy sauce, water, honey, and ginger to make the sauce.
  • Add the sauce to the chicken, simmer until thickened.
  • Serve the chicken over cooked rice and steamed vegetables, then sprinkle sesame seeds and green onions.
  • Add extra teriyaki sauce at the end for more flavor.

Notes

For best results, use fresh vegetables and high-quality chicken.
