Delicious tacos filled with flavorful teriyaki chicken and crunchy slaw, topped with fresh herbs and sauces for a perfect fusion of flavors.

Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 0.25 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch (plus 2 tablespoons water for slurry)
  • 2 tablespoons water (for slurry)
  • 1 tablespoon olive oil (for cooking)

Tortillas

  • 8 small flour or corn tortillas

Slaw

  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 0.5 cup shredded carrots
  • 0.25 cup chopped green onions
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Sriracha mayo

  • 0.25 cup mayonnaise
  • 1 tablespoon sriracha

Additional toppings

  • to taste avocado slices
  • to taste sesame seeds
  • to taste cilantro leaves
  • to taste lime wedges

Instructions 

  • Whisk soy sauce, honey, brown sugar, sesame oil, ginger, and garlic; prepare cornstarch slurry.
  • Cook chicken in olive oil until browned; add sauce and thicken with slurry.
  • Mix shredded cabbage, carrots, green onions with vinegar, sesame oil, salt, and pepper for slaw.
  • Warm tortillas; assemble tacos with chicken, slaw, mayo, and toppings.

Notes

For best flavor, serve tacos immediately with fresh toppings.
