A flavorful baked casserole combining ground turkey, vegetables, and rice in a savory teriyaki sauce, perfect for a quick and healthy meal.

Ingredients

Vegetables and Rice

  • 2 teaspoons canola oil
  • 1 pound ground turkey
  • 1/2 onion chopped onion
  • 1 tablespoon minced ginger
  • 2 garlic cloves minced garlic
  • 2 cups broccoli florets
  • 1 red bell pepper diced red bell pepper
  • 1/2 Napa cabbage thinly sliced Napa cabbage
  • 2 cups cooked brown rice
  • 2 tablespoons minced flat-leaf parsley
  • 1/2 teaspoon toasted sesame seeds
  • 1/3 cup rice vinegar
  • 1/3 cup water
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons minced ginger
  • 1 garlic clove minced garlic

Instructions 

  • Preheat oven to 350°F and prepare baking dish.
  • Cook ground turkey and onion in canola oil until done, then add ginger and garlic.
  • Add vegetables and rice, then stir in sauce. Transfer to baking dish.
  • Cover and bake for 15 minutes. Garnish with parsley and sesame seeds before serving.

Notes

Feel free to add more vegetables or adjust the sauce ingredients to taste.
