A flavorful baked dish combining seasoned ground beef, rice, beans, and cheese with a Tex-Mex twist.

Ingredients

Meat

  • 1 lb lean ground beef (95%)
  • 1/2 cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp tomato paste
  • 3/4 cup chopped tomatoes
  • 1/2 cup salsa
  • 1 can black beans (drained and rinsed)
  • 1 cup cooked basmati rice
  • 2 cups cheddar cheese (grated)
  • 1/4 cup green bell pepper (diced)

Seasonings

  • Salt
  • Black pepper

Instructions 

  • Preheat oven to 350°F and prepare a baking dish.
  • Cook ground beef in a skillet until browned, then drain excess fat.
  • Cook diced onion in the skillet until translucent, add garlic, then return beef to the pan.
  • Add tomato paste, chopped tomatoes, and salsa; mix well. Stir in black beans and cooked rice.
  • Transfer mixture to baking dish, top with grated cheese and green pepper, then bake for 25 minutes. Broil for 2-3 minutes until golden.

Notes

For a spicier version, add some chili powder or hot sauce.
