A flavorful baked dish combining seasoned ground beef, rice, beans, and cheese with a Tex-Mex twist.
Ingredients

lean ground beef (95%)

onion (diced)

garlic (minced)

chopped tomatoes

salsa

black beans (drained and rinsed)

cooked basmati rice

cheddar cheese (grated)

green bell pepper (diced)

Instructions
Preheat oven to 350°F and prepare a baking dish.
Cook ground beef in a skillet until browned, then drain excess fat.
Cook diced onion in the skillet until translucent, add garlic, then return beef to the pan.
Add tomato paste, chopped tomatoes, and salsa; mix well. Stir in black beans and cooked rice.
Transfer mixture to baking dish, top with grated cheese and green pepper, then bake for 25 minutes. Broil for 2-3 minutes until golden.
Notes
For a spicier version, add some chili powder or hot sauce.
