Texas Style Beef Chili Recipe That Melts in Your Mouth

This hearty Texas-style beef chili is slow-cooked to perfection, resulting in tender meat and bold flavors that will warm you up from the inside out.

Ingredients

Meat

  • 2 lb beef chuck roast (cut into 1 inch cubes)
  • Salt and pepper (to taste)
  • 2 tbsp avocado oil
  • 1 white onion diced onion
  • 2 diced bell peppers
  • 1 diced poblano pepper
  • 1 minced jalapeno
  • 6 cloves garlic cloves (minced)
  • 2 cans chopped tomatoes
  • 1 can kidney beans (drained)
  • 1 can hatch chilis
  • 4 cups chicken stock or beef stock
  • 1 tbsp fish sauce
  • 3 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tsp chipotle powder
  • 2 tsp oregano
  • 1 tbsp cumin
  • 1 bay leaf bay leaf
  • 1 lime juiced
  • 0.25 cup cilantro (chopped for garnish)

Optional toppings

  • chopped red onion, avocado, cilantro, cheese, sour cream (for serving)

Instructions 

  • Season beef with salt and pepper, pat dry, then sear in batches in hot oil until golden, about 2 minutes per side. Remove and set aside.
  • Sauté onions, bell peppers, and poblano until translucent, about 5-10 minutes. Add jalapeno and garlic, cook for 2 minutes.
  • Add chopped tomatoes, kidney beans, hatch chilis, stock, fish sauce, spices, and bay leaf. Return beef to the pot and simmer covered for 2 hours until tender.
  • Remove bay leaf, stir in lime juice and cilantro. Adjust seasoning and serve with optional toppings.

Notes

For extra flavor, let the chili rest for 30 minutes before serving to allow flavors to meld.
