Ingredients

Dairy-Free Chocolate Chips

  • 1/2 cup refined coconut oil, melted and cooled (or ghee)
  • 2 tablespoons coconut sugar
  • 1 large egg at room temp (or flax egg)
  • 2 teaspoons vanilla extract
  • 2 cups almond flour
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon sea salt
  • 3/4 teaspoon baking soda
  • 1 heaping cup dairy-free chocolate chips or chunks

Instructions 

  • Mix coconut oil, coconut sugar, egg, and vanilla until smooth.
  • Add almond flour, cinnamon, salt, and baking soda; mix until combined.
  • Fold in chocolate chips or chunks.
  • Refrigerate dough for at least 30 minutes.
  • Preheat oven to 350°F (175°C). Form 12 cookies on a lined baking sheet.
  • Bake for 10-11 minutes until edges are golden. Cool and enjoy!

Notes

Chilling the dough enhances chewiness. Use dairy-free chocolate for vegan option.
