Ingredients

Dry ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon espresso powder (optional) (Don't use if you don't like coffee)
  • 3/4 cup unsalted butter
  • 2 Tablespoons oil (canola, vegetable, or coconut)
  • 1 1/3 cups granulated sugar (divided)
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons vanilla extract (optional) (recommended)
  • 3/4 cup chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment and spray with non-stick spray.
  • Sift dry ingredients: flour, baking powder, salt, cocoa, and espresso powder. Set aside.
  • Melt butter with oil and 1/3 cup sugar over medium heat. Remove from heat.
  • Whisk eggs, egg yolk, vanilla, and remaining sugar until combined. Gradually add warm butter mixture, whisking constantly.
  • Stir in dry ingredients and chocolate chips until just combined. Pour into pan and smooth top.
  • Bake for 28-30 minutes until edges are firm and top is shiny. Cool completely before slicing.

Notes

Do not overmix to keep brownies fudgy.
