Ingredients

Protein

  • 1 lb skinless cod fillet
  • 2 tbsp oil
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • 0.5 tsp ground cumin
  • salt to taste salt
  • 0.25 cup greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 0.5 tsp paprika

Slaw

  • 1 cup purple cabbage, shredded
  • 0.75 cup carrots, shredded
  • 0.33 cup frozen corn, thawed
  • 2 tbsp jalapenos, chopped
  • 0.25 cup cilantro, chopped

Tortillas

Instructions 

  • Marinate the fish with oil, lemon juice, paprika, cayenne, cumin, and salt for 30 minutes.
  • Prepare the sauce by mixing yogurt, mayonnaise, lemon juice, paprika, and salt until smooth.
  • Combine shredded cabbage, carrots, corn, jalapenos, and cilantro to make slaw.
  • Cook the marinated fish in a skillet for 3-5 minutes until done, then break into chunks.
  • Char tortillas over flame, assemble with fish, slaw, and sauce, then garnish with jalapenos and cilantro.
