Ingredients

Base ingredients

  • 0.5 cup mashed ripe banana
  • 0.25 cup oat flour or gluten-free flour
  • 1 cup old-fashioned oats
  • 1 egg egg
  • 0.25 cup pure maple syrup
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup peanut butter or nut butter
  • 0.25 cup pumpkin seeds
  • 0.25 cup sunflower seeds
  • 0.25 cup crushed freeze-dried berries or dried fruit (raspberry)
  • 0.5 cup almond flakes or chopped almonds

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix mashed banana, egg, maple syrup, salt, cinnamon, and peanut butter until combined.
  • Add flour and mix well.
  • Fold in oats, seeds, dried fruit, and almonds.
  • Use a 2 tbsp scoop to shape cookies, press down slightly, and bake for 14-15 minutes. For crisper cookies, bake an additional 2 minutes.

Notes

For a crunchier texture, bake a few extra minutes.
