Delight in these luscious strawberry cake ice cream sandwiches, combining homemade cake with creamy vanilla ice cream and colorful sprinkles for a perfect treat.

Ingredients

Cake Mix

  • 15.25 oz Strawberry Cake Mix
  • 3 large eggs (usually required for cake mix)
  • 0.5 cup vegetable oil (usually required for cake mix)
  • 1 cup water (usually required for cake mix)
  • 1.5 Quarts Vanilla Bean Ice Cream
  • 0.5 cup Fresh Strawberries (finely diced, optional)

Decorations

  • to taste Pink/White Sprinkles (for decorating)

Instructions 

  • Preheat oven to 350°F (175°C). Grease two 9×13-inch pans.
  • Prepare the cake batter as per box instructions, fold in diced strawberries, spread evenly, and bake for 10–12 minutes. Cool completely.
  • Freeze the cooled cakes for 20 minutes. Slightly soften ice cream at room temperature for 5 minutes.
  • Layer the ice cream between the cake layers, then cover and freeze for at least 4 hours.
  • Cut into 12 rectangles, decorate with sprinkles if desired, and serve.

Notes

For cleaner cuts, slightly warm the knife before slicing.
