A quick and flavorful stir-fry combining tender tilapia with fresh vegetables and rice noodles for a satisfying meal.

Ingredients

Protein

  • 8 oz tilapia

Vegetables

  • 1 bell pepper yellow bell pepper
  • 0.5 onion chopped onion
  • 3 tomatoes tomatoes

Aromatics & Sauces

  • 3 garlic cloves minced garlic
  • 1 tsp hoisin sauce
  • 2 tbsp soy sauce

Other

  • 1 tbsp olive oil
  • 6 oz rice noodles

Instructions 

  • Heat oil in a pan over medium-high heat. Add onion and bell pepper; cook for 3 minutes.
  • Add chopped tomatoes and minced garlic; stir in hoisin and soy sauces; cook for 1 minute.
  • Cut tilapia into 1-inch pieces and add to the pan; season with salt and pepper; cook for 2-3 minutes.
  • Cook rice noodles according to package; drain and add to the pan; stir well.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
