A quick and flavorful stir-fry combining tender tilapia with fresh vegetables and rice noodles for a satisfying meal.

Instructions
Heat oil in a pan over medium-high heat. Add onion and bell pepper; cook for 3 minutes.
Add chopped tomatoes and minced garlic; stir in hoisin and soy sauces; cook for 1 minute.
Cut tilapia into 1-inch pieces and add to the pan; season with salt and pepper; cook for 2-3 minutes.
Cook rice noodles according to package; drain and add to the pan; stir well.
