Ingredients

Dough

  • 1.5 sticks unsalted butter, softened (Butter should hold its shape but dent when pressed.)
  • 3 large eggs, room temperature (Warm quickly in warm water for 5-10 minutes.)
  • 1 cup white sugar (200g)
  • 1 cup light brown sugar (Packed into measuring cup, 217g)
  • 3 cups cake flour
  • 1 Tablespoon baking powder (12g)
  • 0.5 teaspoon salt (3g)
  • 1 cup sour cream (242g)
  • 2 teaspoons vanilla extract (8g)
  • 0.5 cup whole milk (121g)
  • 0.25 cup vegetable oil (54g)
  • 0.5 cup toffee bits (Heath Bits O' Brickle, 72g)
  • 0.5 cup chopped pecans (49g)

Frosting

  • 2 sticks unsalted butter, softened
  • 8 oz full fat cream cheese, softened
  • 0.5 teaspoon salt (3g)
  • 2 teaspoons vanilla extract (8g)
  • 6 cups powdered sugar (690g, add more if needed)
  • 3 Tablespoons caramel sauce (Smucker's Caramel Topping, 42g)

Instructions 

  • Preheat oven and prepare cake pans. Mix dry ingredients and creamed butter, eggs, sugars, sour cream, milk, oil, toffee bits, and pecans to make the batter.
  • Divide batter into pans and bake at 350°F (175°C) for about 30-35 minutes. Let cakes cool completely.
  • Beat softened butter, cream cheese, vanilla, salt, and powdered sugar until smooth. Mix in caramel sauce.
  • Spread frosting between layers and over the top. Decorate with additional pecans and toffee bits if desired.
  • Chill the cake before serving to set the frosting.

Notes

Ensure to fully cool the cakes before frosting to prevent melting.
