A deliciously creamy Tuscan-inspired salmon dish that combines rich flavors of parmesan and sun-dried tomatoes.

Ingredients

Main Ingredients

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 pieces salmon fillet
  • salt and pepper (to taste)
  • 2 cloves garlic
  • 3-4 pieces sun-dried tomatoes (packed in oil, sliced)
  • 125 ml dry white wine
  • 250 ml double/heavy cream
  • 50 g parmesan cheese
  • 30 g fresh spinach

Instructions 

  • Pat salmon dry, season with salt and pepper, then sear in olive oil and butter for 6-7 minutes until golden.
  • Add garlic and sun-dried tomatoes to the pan, sauté for 30 seconds, then deglaze with white wine and simmer for 5 minutes.
  • Stir in heavy cream and parmesan, add spinach, return salmon to the pan, and simmer for 5 minutes.

Notes

For extra flavor, consider adding fresh herbs like basil or parsley before serving.
