A quick and hearty one-pan meal combining ground beef, peppers, and rice for a satisfying dinner.

Ingredients

Meat and Vegetables

  • 1 1/2 pounds ground beef
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt & black pepper, to taste Salt & black pepper (to taste)
  • 1 diced green bell pepper
  • 1 diced red bell pepper
  • ½ yellow onion yellow onion (diced)
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 14.5 ounces petite diced tomatoes, drained
  • 15 ounces tomato sauce
  • 2 cups instant white rice
  • Beef broth (salted, follow rice package instructions for ratio) beef broth (follow rice package instructions for ratio)

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Sauté peppers and onion for 5 minutes.
  • Add ground beef and cook until no pink remains. Stir in garlic and cook 30-45 seconds.
  • Drain excess grease, then season with onion powder, garlic powder, Italian seasoning, salt, and pepper.
  • Stir in tomatoes, tomato sauce, rice, and beef broth. Bring to a boil.
  • Reduce heat, cover, and simmer until rice is cooked and liquid absorbed.
  • Serve warm and enjoy!

Notes

Feel free to add cheese or hot sauce for extra flavor.
