Ingredients

Dry Ingredients

  • 480 g cake flour
  • 10 ml baking powder
  • 5 ml baking soda
  • 5 ml salt

Wet Ingredients

  • 170 g coconut oil (room temperature)
  • 170 g butter (room temperature, 1.5 sticks)
  • 500 g granulated sugar (2 ½ cups)
  • 8 egg whites egg whites
  • 2 tablespoons vanilla bean paste
  • 2 teaspoons vanilla extract
  • 1 teaspoon imitation vanilla extract (optional)
  • 2 cups buttermilk (480 ml)
  • 226 g butter (1 cup or 2 sticks)
  • 226 g cream cheese (8 ounces)

Additional Dry Ingredients

  • 6-8 cups powdered sugar

Instructions 

  • Preheat oven to 350°F (180°C). Grease three 8-inch cake pans and line with parchment.
  • Mix flour, baking powder, baking soda, and salt in a bowl; set aside.
  • Cream together butter, coconut oil, and sugar until pale and fluffy, about 5 minutes.
  • Gradually add egg whites and mix until combined. Add extracts and mix well.
  • Alternate adding dry ingredients and buttermilk to the batter, starting and ending with dry ingredients. Divide evenly into pans and bake for 35-40 minutes.

Notes

Ensure not to overmix the batter to keep the cake moist and tender.
