A creamy and comforting dessert made with rice, milk, and vanilla, perfect served warm or chilled.

Ingredients

Rice and Water

  • 1 cup short-grain white rice
  • 2 cups water
  • 3 cups whole milk
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract or vanilla bean, split and scraped
  • 1 tbsp butter (optional) (for added creaminess)
  • 1 tsp ground cinnamon (optional) (for garnish)

Instructions 

  • Combine rice and water in a saucepan, bring to boil, then simmer 10-15 minutes until water is absorbed.
  • Stir in milk and sugar, cook over medium heat, stirring until thickened (~20 minutes).
  • Mix in vanilla extract and butter, stir well.
  • Spoon into bowls, garnish with cinnamon if desired, and serve warm or chilled.

Notes

For a richer flavor, use a vanilla bean instead of extract.
