A creamy and delicious Veggie Orzo packed with nutritious vegetables, perfect for toddlers and families alike.

Ingredients

Vegetables

  • 2 tbsp olive oil
  • 1 cup broccoli (chopped)
  • 1 cup carrots (finely shredded)
  • 2 tsp garlic (minced)
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 oz cream cheese
  • 1/2 cup parmesan cheese

Instructions 

  • Chop broccoli and shred carrots.
  • Heat olive oil in a pot, add broccoli, carrots, and garlic. Sauté for 5 minutes.
  • Add orzo and chicken broth, bring to a boil, then cook for 10-15 minutes.
  • Stir in cream cheese and parmesan until melted and creamy.
  • Cool slightly before serving. Enjoy as is or with grilled chicken or fish.
