Ingredients
Olive and Tomato Mixture

mixed olives, quartered if large

sun-dried tomatoes packed in oil, drained and roughly chopped

fresh lemon zest or orange zest

feta cheese block packed in water, drained

plain whole milk Greek yogurt

milk of choice (optional, to thin mixture)

Instructions
Preheat oven to 400℉ (200℃). Combine olives, sun-dried tomatoes, olive oil, zest, and garlic in an oven-safe dish. Roast for 12 minutes.
Meanwhile, blend feta and Greek yogurt in a food processor, streaming in olive oil until smooth. Thin with milk if needed.
Spread the whipped feta in a dish, broil for 3-4 minutes until bubbling, then top with roasted olives and garnish with rosemary, pepper, and zest.
Serve immediately with fresh vegetables, crackers, or crisps for dipping.
Notes
For a milder flavor, adjust the amount of garlic and rosemary to taste.
