Ingredients

Olive and Tomato Mixture

  • 1 cup mixed olives, quartered if large
  • cup sun-dried tomatoes packed in oil, drained and roughly chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons fresh lemon zest or orange zest
  • 1 clove garlic, minced
  • 2 sprigs fresh rosemary (plus more for topping)
  • 8 ounces feta cheese block packed in water, drained
  • ¾ cup plain whole milk Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon milk of choice (optional, to thin mixture)

Garnish

  • to taste Minced fresh rosemary
  • to taste Cracked black pepper
  • to taste Additional lemon zest or orange zest

Serving accompaniments

Instructions 

  • Preheat oven to 400℉ (200℃). Combine olives, sun-dried tomatoes, olive oil, zest, and garlic in an oven-safe dish. Roast for 12 minutes.
  • Meanwhile, blend feta and Greek yogurt in a food processor, streaming in olive oil until smooth. Thin with milk if needed.
  • Spread the whipped feta in a dish, broil for 3-4 minutes until bubbling, then top with roasted olives and garnish with rosemary, pepper, and zest.
  • Serve immediately with fresh vegetables, crackers, or crisps for dipping.

Notes

For a milder flavor, adjust the amount of garlic and rosemary to taste.
