A quick and nutritious breakfast wrap filled with eggs, fresh vegetables, and optional cheese, perfect for on-the-go mornings.

Ingredients

Eggs

  • 2 large eggs

Vegetables

  • 1/4 cup fresh spinach leaves

Wrap

  • 1 whole-wheat tortilla whole-wheat tortilla

Toppings

  • 2 tbsp diced tomatoes
  • 2 tbsp diced red bell pepper
  • 1 tbsp diced red onion
  • Salt and pepper to taste Salt and pepper
  • 1/4 cup shredded cheddar cheese (optional)

Cooking fat

  • a small amount cooking spray or olive oil

Instructions 

  • Whisk eggs, season, and sauté diced vegetables in a skillet.
  • Pour eggs over vegetables and cook until set.
  • Add spinach and cheese, then fold eggs.
  • Transfer mixture onto the tortilla, roll up, and serve.
